i got bored so i made some blondies

Here is a super duper rough recipe for some gluten free, plant-based blondies that don't taste too disappointingly healthy. I do use scales but my measurements are never exact so there's a little bit of room for you to make adjustments to your taste (that is another way of me saying I have no idea what I'm doing when I'm cooking most of the time)!


Ingredients:

  • 170g ground almonds

  • 30g desiccated coconut

  • 150g coconut sugar

  • 150g buckwheat flour

  • 220g (no idea how many ml this is, probably around the same) almond milk

  • 4+ tsp maple syrup - sweeten to taste

  • 1tbsp lucuma powder (not essential but gives a more caramel-y taste)

  • 2tsp baking powder (in all honesty I never know how much to put in when I'm baking - if you know better please stick to that)

  • pinch of salt

  • flaked almonds - add however many you want


Method:

  • preheat the oven to 180° (fan)

  • mix all the dry ingredients

  • add the milk (adjust for consistency if you need to - aiming for a batter that's slightly thicker than for a cake, for example)

  • bake (in a lined baking tray) for 30-35 minutes - my usual gauge is until they smell like they haven't quite burned but might quite soon - use a fork or skewer to check they're baked through

  • leave to cool before serving however you want or, if you're greedy like me, don't wait and just enjoy


served with alpro almond yoghurt, more flaked almonds and crushed frozen berries
